Tired of “words I can’t pronounce”

Okay, good topic - enriched foods with vitamins. "Vitamins are good, but they have scary names".

So let's take bread with "riboflavin" in it. What they do is remove the wheat germ so it doesn't go bad, and then since that removes all the nutrients, they "add it back". The issue is not every source of getting these vitamins artificially added makes them necessarily bioavailable. It's likely the fortified foods just give you very fancy pee.

So from that perspective just choosing freshly made bread that might not keep very well might end up being the more nutritionally better choice, especially since it probably isn't made with dough conditioners and other facilitators that are also bad for you.
