So what IS a decent mountain to do as a beginner? (Winter and Spring)

I know this isn't the time if you are asking about but a great easy mid/late summer objective is Mount Begbie near Revelstoke in bc Canada. Steeper hike in with a short straightforward glacier crossing to a bolted exposed ledge (the only place you would potentially need any protection) with the rest being a super enjoyable 3rd class scramble on good quality quartzite, though many do this part unroped. There is a campsite that does not need to be booked halfway ish to the summit. You can spend the night or do it in a day. Can't remember the exact distance (around 10k each way ish?), It is 2100m elevation gain to the top.
