Another ECAH Savior

Why is a very pale Canadian boy who has never left the country so obsessed with Mexican flavors ? I have no idea, but Canadian food is bland and I like spices.

Anyhow, this requires a bit more effort than the Reese's Pieces looking dish I made last week, but it is as cheap, as healthy and as versatile.

Reese's Pieces dish in question : https://imgur.com/R4I1161 It's loosely based on a dish called Calabacitas con crema / Zucchini in cream sauce.

It's still cold as hell and barely no vegetables are in season except for potatos and Rutabagas. Since rutabagas are for the pretentious folks, I went with sweet ol' potaytos instead of zucchinis.

I also forgot to add corn, but that's a metaphor for life.

I used it to make tacos yesterday. The mix will make about 12-14 tacos. I'll eat it with eggs and over rice throughout the week.

Tortillas

Olive oil

1- Red Pepper (Roasted)

1- Green Pepper (Roasted)

2 - Jalapeno (Roasted)

2 - Sweet Potatos (Roasted)

1- Red Onion

3 - Garlic cloves

2 - Cans of fire roasted tomatos

1/3 cup Heavy cream

1 - tsp Paprika

1 - Tsp Chili Powder

2 - tsp Cumin

Cilantro Garnish

Salt to taste

OPTIONAL

Black Bean Purée

1/4 - Onion, chopped

2 - cloves

1- Lime

1 - can of Black Beans Bunch of Cilantro stems, finely chopped

Sour Cream (Mix all ingredients)

1 - 250ml Sour Cream

1- lime

1-4 tsp hot sauce ( I used the brand I DON'T DO FREE ADVERTISING )

Cilantro, chopped

Sweet Potato Mix

-Cube Sweet Potatoes, cover with olive oil, salt and pepper. Roast until brown in a 425 oven. It took me like 30-40 minutes.

Cut peppers in halves, put oven on broil, brown the peppers with oil until black. Took like 15 minutes.

Remove burnt skin. Congrats, the burnt skin is now on your hands. Pro tip discovered yesterday: Wait until they cooled off a bit before peeling the skin off. Chop the peppers

-In a skillet sauté onions until brown, add garlic and spices for a minute.

I don't care for tomato chunks, so I used a blender to purée the roasted tomatoes. Add to the mix.

Add sweet potatoes, stir.

THIS IS WHERE YOU WOULD NORMALLY ADD CORN IF YOU WERE NOT TOO BUSY WATCHING TV WHILE COOKING.

Add heavy cream

Add chopped roasted peppers, add to the mix

Let simmer for 10-20 minutes

Black bean mix

Sauté Onions

Add garlic, cilantro stems and spices

Drain and rinse black beans, add to the pot

add 1/2cup water. Let it cook until most of the water is gone and beans are soft.

Mush them roughly. Abuse those suckers

Remove from heat, add lime juice, stir.
