Anybody got a recipe for cheesy cauliflower rice that's not a thick, globby calorie bomb? How do you lighten a cheese sauce?

10 oz. riced cauliflower - 67 calories - 10 carbs - 0 fat - 3 protein 4 Tbsp Butter (half a stick) - 400 calories - 0 carbs - 46 fat - 0 protein 12 oz. 4% cottage cheese - 360 calories - 15 carbs - 15 fat - 36 protein

Total: 804 calories, 25 carbs (20%), 61 fat (49%), 39 protein (31%) Per serving (4 servings of about 6 oz.): 201 calories, 6.25 carbs, 15.25 fat, 9.75 protein

This may not seem like a great recipe because it is so high in carbs (20% when I am aiming at 5%), super low in fat (49% when I am aiming for 70%), and slightly too high in protein (31% when we're aiming for 25%). However, while the goal of 5% carbs is do-able, I never get low enough protein unless I work out as the only foods that are super high in fat are oil and butter and everything else has either carbs or protein so I err on the side of protein. Given that we all eventually crave vegetables (or starches as this is attempting to mimic), this could be a nice side dish - especially if you are in maintenance or not worried about keeping your protein low enough that you stay in ketosis.
