Food stall costs @ Garage & City Market?

I do agree with that, so much has been affected by Covid & WFH but I am definitely not at the capacity to do any kind of full on dinner service/style restaurant. I’m inspired a lot by places like love handle & the bagel deli. The one thing I’m wanting to do differently than other places is offer plenty of vegan options. It would actually be more of a vegan deli/baked goods but with all of the sandwiches also having a meat option. Now on one hand I can see that helping in the sense that alot of places downtown have vegetarian but not vegan options (or very few) & honestly as a former vegan most of the vegan options aren’t very good/well made in my opinion. I can also see this being a problem because not everyone is vegan (hence having non vegan options as well) but I do believe something in that niche would do much better somewhere where more people can be exposed to it and word of mouth is pretty important when it comes to people with specialty diets like that.
