How many rounds of interviews is acceptable you think?

Entry-level - If a company is spending more than one visit, you have to wonder about the company, not the job-seeker.

Mid-level - 2 rounds. First one with an HR person, then maybe 3 people on their team. Second one, supervisor + maybe a person with a lot of hiring experience as a 3rd party tie-breaker.

Sr-Level - AVPs or something like that, you should be prepared for 3+ rounds with a lot of different people because you are going to work across departments at a high level.

C-Level - All bets are off. Last one I sat for took months. Ended up not getting the job after 4-5 months of call-backs / Zooms / meetings. I was on the fence about going to the last in-person meeting.
