Modelling vs Sculpting? Where do I start?

You will definitely miss fundamentals if you go straight into sculpting.

The end result of sculpting a model is a very messy mesh that is very, very difficult to use for anything. e.g. Retolopogy is a necessity for the majority of sculpts and you will not be able to do that without the skills you would learn by using Edit Mode and its tools.

The doughnut tutorial is highly praised for a very good reason. It gently introduces you to many of Blender's facilities and gives you a general sense of what Blender as a whole can do. Even if you intend to sculpt as your primary focus, the doughnut tutorial will not teach you anything superfluous to that end.

And yes, Blender is suitable for you if you wish to create Beeple-like artworks but you'll also need other software as well. (Beeple uses half a dozen or so pieces of software)
