So you are assuming no new entrants will try to open restaurants at all?

Assuming the demand for restaurants is still reasonable, why wouldn't people want to take advantage of that massive opportunity?

Why wouldn't new and old players be able to get bankrolled by investors or take on partnerships?

I imagine successful players like Grant Achatz, Brendan Sodikoff, Stephanie Izard, etc.. would get the opportunity to dominate the industry if they can weather this on their own, or put any effort into an investor pitch.

At a worst case lets assume restaurant demand will be down 40% for the next year. If you expect 70-80% of restaurants to close, there's a huge opportunity to take on that demand.
