After leaving Europe I'm finding it hard to enjoy the US

Not the person you asked, but 1- check whether you can get dual citizenship via descent to one country in the EU, which'd entitle you to live & work anywhere else in the EU- some countries allow it back generations.

Otherwise look at studying abroad- most (all?) countries in Europe have degrees fully taught in English, and most countries have a post study visa, to encourage you to stay on and look for work after graduation. Most BAs are 3 years, many MAs are 1 year, & often very low fees- $1-5k a year in many countries, or free in others like Germany, for international students. No need to speak the local language/ any foreign language. You can work part time while studying, and get healthcare on similar terms to a local. I gave someone else more detailed info on both here. This Kiwi girl managed to go to uni in France for free- a combo of low fees, plus paid placement which had free lunches and a travel allowance etc-video.

You can look for jobs abroad, too- there's plenty of English speaking workplaces.
