I've fished in similar inflatables and it's typically a pain in the ass. Don't fill it enough, or just enough, and you're still sagging around in it and borderline unstable, too much and you'll pop the seams. I've had a six pound channel catfish pull me around ponds in them, which sounds fun but it's definitely not when it's already and unstable boat on a big lake with choppy waves rather than a small farm pond lmao.

There is one inflatable pontoon, I think it's made by intext, that seems pretty easy to modify with a hard surface platform to stand on, install fishing rod holders onto etc, never use one but if I ever buy another inflatable, it will be that one. Would be a pain to transport and store but it'd be worth it if you can't afford a boat (me) or have storage for one if you could afford it (me).
