Best Day Job for Writing

OP I was in your exact position in college and this will seem completely crazy, but I'm a self-employed personal injury lawyer and it's a close-to-perfect job for people like us if you work it right: you help injured people get money for accidents they didn't cause by suing insurance companies, you control which clients you will accept, you make a good amount of money doing it, you have plenty of time to meet deadlines, you set your own hours, and almost everything settles out of court so you rarely go to trial for stuff. Sure, there are weeks where it sucks and you're working your ass off on a huge trial with a pushy client. And law school is pretty horrible and a 3-year, expensive investment. But on this side of things it's amazing! 95% of the year I'm just making a few phone calls a day, emailing clients and adjusters, and typing/filing form-based legal documents. I'd say I work an average of about 2 hours a day and have never had any problems getting stuff done. Now in those 2 hours I go 500%, I don't half-ass my job. There's just not that much work to do day-to-day if you don't take every case that walks in the door.

I'm in a pretty well-known indie band that plays all over my town and tours a couple times a year. I'm writing and recording an entire album this autumn. When I'm finished with that, I'm gonna go straight to work on a young adult novel I've been dreaming up the past few months. I majored in creative writing in college and have always wanted to write a novel.

Seriously OP, do this and practice law in your hometown where your family and friends are. People always get in car wrecks or get hurt in some way. Older lawyers will throw you cases they don't want when you're just starting out. If money ever becomes an issue you can hop on with a firm and get experience and a guaranteed workload. Who knows, you may even actually like being a lawyer. Whatever you do, good luck and keep writing!
