Book series where the MC are not the 'MC'

Goblin Slayer is a Japanese light novel series set in a D&D-like world, where the titular character only selects goblin-slaying quests from the bulletin board in the adventurers guild. His peers are taking on much more significant quests, and there are the heroes who deal with the high-stakes stuff like world-threatening incursions from demon lords and the like.

This is not necessarily a recommendation. The anime adaptation comes with trigger warnings for rape and the whole franchise comes with the usual breast and panty fixations. The English versions of the light novels are deficient in grammar and logic; I don't know how the blame should be shared between the author and translator, but I suspect equally.

However, the premise is neat and fits the question ::shrug::
