ChickeN marsala/ lentils and rice with flaxseed and roasted Reds/ broColli and cauliflower. Plus snacks

No idea why my phone typed it out like that

Marsala- cut chicken breast into bite size pieces. Season with salt pepper paprika. Dredge with flower, fry in oil 4 mins. Flip repeat remove. Drain all but 1 tbsp oil, add pancetta, brown it, add mushrooms, soften em, add garlic and saute 1 min before stirring. Now 1 cup marsala/white wine + 1 cup stock. Reduce, add chicken, done.

Lentils and rice-

Fry an onion in some oil on high then low heat til brown--5 mins. Add 3/4 cup lentils, red pepper flakes, 1 tsp beef bouillon, dried parsley. Cover with water. Simmer til water is reduced by half (10 min) add 3/4 cup rice/flax mix, cover with water, simmer 10 more mins. Add roasted reds (oil/salt/pepper on the grill after cutting them into strips)


Saute garlic in a little oil 30 seconds. Add broc and cauliflower, stir and season. Add 1/4 cup water, cover and cook til soft. Add hot sauce and lemon, done

The grapes are moon drops and cotton candy grapes from the grapery--amazing!!
