Deleted RAID 1 Array - Need help!

We have an old SCO UNIX server at our plant that runs RAID 1 with hotspare on an Adaptec 2200S scsi controller. The hard disks drives are ultra 320 SCSI seagate Cheetahs. Over the Memorial Day weekend, one of the drives in the array went bad. I ordered a new drive, same model and make with same specs and followed what I thought was the correct documentation for my controller card in trying to add the drive to the array and having it rebuild again. Unfortunately, after following the documentation, which told me to initialize the disk first then it would rebuild on its own, the server would no longer boot to the operating system and the controller BIOS was telling me there were no arrays present. So I must of deleted the array. It's odd because I only initialized the one drive only, nothing else, not any of the other drives. So now I am stuck. I have backup tapes that are very recent but I have no knowledge of using the backup software to restore the drives. At this point, I've been told to try the follwoing

recreate the array, restore from backup

attempt to salvage the data using a scsi adapter to USB

boot the disk using JBOD (just of bunch of disks)

Unfortunately, the last 2 are not working out for me and I am running out of time here before the server is needed again to access information on old records. The server isn't heavily utilized much except looking up old records.

Here is what I have tried so far:

using clonezilla or ubuntu to see the disks

updating controller BIOS

Here is the system specs that I can show to the best of my ability:

Intel Xeon Processor

This isn't applicable to what I am dealing with unfortunately. The mirror doesn't even show up in the controller bios. I think the array is completely gone and severely corrupted. I took the other two disks (one was a hot spare and the other is new) and created a new RAID 1 array. The other disk that i wanted to get information from was taken out of the computer so I wouldn't disrupt anything on it. I am now trying to restore from a tape backup, which isn't going so well at the moment.
