It doesn't make sense that a majority of stores are open 9-5 when most people work 9-5

In most countries there’re already laws in place that regulate how many hours an individual worker is allowed to work per week. It’s not like anyone would work more hours than their contract specifies anyway. So no, the employees absolutely wouldn’t work more if supermarkets were to open on Sundays too. That doesn’t make any sense. Most businesses that are open on Saturdays already employ multiple shifts.

If a business wants to be competitive on Sundays they would thus be forced to create new jobs. If they decided that this wouldn’t be financially feasible then they’d just stay closed. Let the free market decide when businesses are open. Not some antiquated perception of how a work week should look like.
