I think you got a post with someone else's experience confused with mine? The small dog in my case did not attack whatsoever. It didn't do anything to bring on the attack from my dog other than walking towards us. It was coming over to say hi and was probably about 3 feet away when the dog I was walking jumped at the small dog and latched onto the dogs head. My dog then would not release for what felt like quite some time. Because the dog seemed okay after (no blood) I don't think it was fulling biting but the situation was absolutely terrifying and the dog did cause the other owner to bleed and have to go to the doctor for it.

The small dog stayed still and silent throughout the whole attack. I think it was the hand of the other owner in big dogs mouth that finally made the dog release. Not sure where you got the owner running around hysterically part because that did not happen? I would not say the big dog was defending itself because there was never an initial attack or even sniff from the small dog. I think you are right that it is not fair to generalize all pitbulls.
