Freeze-dried meals for vegans?

Can I assume that you’re from Ohio? I’m in Los Angeles and vegan food is completely normal here. Just got back from a weeklong road trip in Mississippi and was shocked at the complete lack of even vegetarian dishes. I have never been to the South before (besides Nashville and New Orleans, but cities don’t count) and I haven’t been to the Midwest besides Chicago. I had no idea that places like this still existed in the United States where every single menu item has meat in it, and a salad consists of a few wilted lettuce leaves with a fistful of grated processed cheese. Hopefully OP doesn’t consider his girlfriend’s vegan food choices “pretty complicated” but after that Mississippi road trip I can see how it appears that way.
