You are not entitled to their identity just because you watch their videos or subscribed. What would you even gain from seeing their faces? What would you gain from some ephemeral "thanks for watching", and why would you assume another video was not being worked on given their usual sparse upload schedule? Again, I have no idea where these expectations came from.

They're thanking their subscribers who don't have the attention span of a goldfish for not unsubscribing just because they haven't uploaded in over 12 minutes? What are you confused about?
