Help me cook an easy coconut chicken curry, please.

Ok cowboys lets get this rodeo cooking.

  1. into a bowl place 2 tbsp of garlic and ginger paste and a generous key bump of each of your spices, salt and chilli flakes. Add a sip of waterto make a paste and then drop in your chicken and mix it up. Try and peal the skin off that lemon and finely chop it or just grate it with a cheeese grater. that's your marinade.
  2. Now, I'm not sure what else you have, oinions, bell peppers etc? but that's ok lets assume you only have coconut milk.
  3. Give that chicken a good 60 minutes to marinate and then take a pot and add some oil (4tbsp), heat it up and dump the chicken in there. fry it off until you can smell the aroma.
  4. Now......dump the coconut milk into the pot with the chicken and give it a stire. If there's loads of chicken and not much coconut milk then just add some water untill the chicken is covered.
  5. Now simmer. Give her a a good 30-60 minutes on low/medium heat until you've got a nice saucy chicken consistency.
  6. Taste......add salt and pepper.
  7. take off the heat, let it rest for 10 minutes. and serve with some rice, fried, bread or just on it's own.
