Price up front and tip is not ever to be expected in any field ever. They are complimentary components. Stand up for yourselves.

Grocery Workers did that. Talking your run of the mill supermarket grocery workers of yore. They have a union, a real benefit structure etc. Because they stood up for themselves and banded together.
