Monitor reccomendatons (Under $900AUD)

Yea my coworker got an ultrawide and I personally don't like it cause it's so short. I'd much rather have multiple 16:9 27" 1080p or (even better) 32" 1440p monitors

I checked AU Newegg and you can get 32" 1440p monitors for $500-$600AU. You'll save money by avoiding Gaming versions with HDR or high refresh rate (120hz+) and Gsync/freesync. (Unless you want to use them for gaming too ;)

Multiple monitors for cad work is glorious/necessary for me now so keep at least one your 21" monitors for emails/documents (or get two bigguns ;)

And I would argue that curved monitors aren't necessarily bad for cad work because it slightly wraps around your field of view, and ends up looking correct when you sit in the proper location (not to close not too far away). If that makes sense? I have a curved 32" at home and a flat 32" for work. I thought curved for work would be bad but now I kinda wish I got a curved one.
