I recommend a seitan pulled chicken to substitute for chicken! It's not tofu, but it is both vegan and healthy.

Make a dough with flour and water.

Wash in water until the water comes out reasonably clear. It'll take a bit of washing.

Let sit for an hour or so.

Wash again. Season with spices. I use paprika and garlic powder as a savoury base, then modify from there. Alternatively, cloves and nutmeg. Also alternatively, cumin and coriandre. Obviously, salt across the board.

Let sit.

Fry. Get a good sear, then add some broth, cover, and let steam for 45 minutes.

I got this specific recipe from a video on reddit, actually. I'll find the post if I can. It's really good and it's close enough to chicken that it can easily be substituted. What's more, it satisfies that meat craving in the same way. However, I find it simulates dark meat, not white meat.
