Can word files be opened offline easily?

There are several ways to work with OneDrive on a Chromebook. One way is to install the OneDrive Android app from Play Store. Your OneDrive is then integrated in read-only mode in the Chromebook Files app and when you need to edit a file it opens offline editing for Docs in Office mode. Changes you make are synched back to OneDrive however the use of Google Docs to edit the Word file can introduce unintended format changes. My preference, because I always have Intenet connectivity, and I prefer to avoid compatability issues by staying inside Microsoft's platforms is to use their new OneDrive web app. Go to onedrive.live.com in your browser and you should be prompted to install the app. This is part of Microsoft's work in progress moving Office on the web to Microsoft 365. Their web app for 365 already works pretty well to tie together the various Office components however the first time you use Outlook, Notes, Teams, etc. you have to tell the browser to use the app rather than a tab going forward. The apps for docx, xlsx and pptx are already integrated in the 365 web app.
