Why don't people just break their NDAs if the news is as big as we think it is?

Three things:

  1. It's likely that low-level military/intelligence folks are as clueless about this as we are, while those who are "in the know" are confined to small and elite circles.
  2. I work with federal contacts, and you have to understand the extreme culture of secrecy that dominates intelligence agencies. If you aren't deemed highly trustworthy, you aren't hired. Once you are hired, the importance of keeping secrets is hammered into your head with extreme repercussions for any violations.
  3. There may be a good reason the government hasn't shared more information yet - or at least they may feel that way, and they may have convinced people that doing so would constitute a major breach of national security and/or the public good. Bear in mind, we may not have the full picture of what's really going on even after disclosure. It's funny to me that people who distrusted the government for so long are so quick to assume it's about to lay all its cards on the table.
