How much of my mom's worries about the coronavirus are truly justified?

Since you live in Canada, there shouldn't be anything to worry about, it seems that the airport has been checking everyone that comes in. It is good to take proper measures like you say, but the anxiety with the flu is somewhat understandable. The Chinese government has downplay the dangerous level of the virus because they don't want to look bad, and the doctor who first saw it has died, and he is only 34, so yeah, the fear is not unfounded. Check out r/Coronavirus and you will see that it is actually lot worst than what major media has been telling people, Chinese government is not exactly doing a great job in the situation, but they were doing whatever they can. Maybe just don't go to direct conflict with your mother, and make extra reassurance that you do all you can to take precaution about this will make her less worry.
