This. OP please please please make sure you understand what "type" of Islam he is getting into.
Islam is a huge religion with many denominations and sects. Make sure you do some research on Islam so you understand what you are getting into by staying with him.
Here's my 2 cents: When I went to university I had some contact with Muslim students and got interested in Islam so I learned about it a bit. Never thought I could help some random person on the internet with it.

In short, if I were you I wouldn't be worried about your bf converting to islam as long as he doesn't follow a few extremist schools of thoughts that groups like ISIS and Taliban or Al-Qaeda follow.
Most of these groups follow a school of thought named Wahhabism and Salafism. Read about them a bit and as long as you don't hear any mentions of this line of though like him saying: "All the other muslims are infidels and we need to start having sharia law in the US" you should be fine.
On the other hand, most converts to Islam are women, not men. Unfortunately it was a long time ago I did my research on Islam and I've lost my notebook where I took notes about it. I do remember some good stuff you might be interested in:
