(Main Ingredients) * 2lbs Chicken (bone in is better for broth. Thighs and drumsticks are my go to.) * 1 medium Onion, cut into sixths * 1 Scallion (or shallot), diced * 3 Garlic cloves, diced * 3 Potatoes, ¾" cubes * ¾th cup Baby Carrots (or 1 large carrot cut into 1/4" slices, * ¼th cup Olives.

(Seasoning) * 4Tbsp Sofrito * 1Tsp Oregano * Black Pepper, to taste * 1½Tbsp Adobo * 2 Bay Leaves * 1 Packet Sazon * 2Tbsp Oil (any) or butter. * 2Tbsp Tomato Paste (or 1 small can of Tomato Sauce)

(Prep) In one large pot: * Cut all vegetables and set aside. * Sear the chicken in the oil (skin down) on medium high untill it's brown and there's fond developing on the pan. Set aside. Depending on your pot size, you may need to do 2 or three batches. * Deglaze the pan with a small about of your liquid of choice. * Fry the sofrito, onions, and garlic until fragrant (about 2mins) * Toss the chicken and all of it's juices back in along with the vegetables and seasonins too * Add enough water to cover (depends on the pot. Most likely a little over 2.5-3 cups) and bring to a boil on high. * Put the lid on and turn it down to a simmer * 45mins and it's lit.

(Optional) Anything lol it's stew. Try Chorizo or Bell Peppers or subbing water for low sodium chicken stock for more chicken flavor. Add cilantro or a dash of cumin seeds if your obsessed with them like me. Make it yours
