I think the changes don't necessarily have to be extremely time consuming to get them to look better. For example, in your video, the text is extremely difficult to read at times. Having that text not right in the middle of the video directly blocking shots of the game and having it over a text box or outlined in black would drastically improve its readability. Same with some of your in game UI. Having it over a darkened background to add contrast would drastically improve readability. If you want immersion, you can even have it only show up when you look at them.
