What qualifies as good or desirable work experience as it relates to law school

I don't think your stats are bad. I know a few students who were admitted with less. You have a decent shot at the lower-mid tier schools. If your goal is U of T, UBC, McGill, etc. then you'll undoubtedly need an LSAT rewrite. 158 is a decent foundation though, and you can build off that.

I think all of those job experiences are worth bringing up in a personal statement or interview if you can directly relate them to your desire to study law. Example: If you have a passion for Human Rights, you could talk about how assisting those with autism/Parkinson's informed your perspective on the need to advocate for certain marginalized groups.

In my personal opinion though, you shouldn't be looking to finesse your CV for the sake of making your work history look more meaningful than it really is. I have a feeling that admissions teams know how to sniff out inauthenticity. Good luck.
