What’s the most amazing thing about the universe?

Por que no los dos?

For example, imagine a big bang followed by a giant crunch, continuing for eternity.

Or what if we're living inside a simulation that was created, but within a "real" universe that has always existed.

Maybe our logic processors are unable to comprehend the truth of the matter either by deliberate design or just by natural limitation of evolution.

Maybe we need to be able to perceive some additional dimension in order to realistically understand the universe, but that dimension hasn't been relevant to our survival.

For example, imagine the universe is in a state where it "exists" and "does not exist" at the same time, but our understanding of existence only needed to be solid and definite for our evolution so we have trouble perceiving or understanding anything else. Because we're solid, we perceive existence as basically solid, but that's just because that is all our perception can catch.

Just spitballing, I usually hate when people think there are only two options just because they couldn't think of any more, though in this case you're very probably right.
