I haven't seen the scale shift in a while, and was getting pretty down. To cheer myself up, I turned one chicken into four meals! (It's hard when you have depression, so this was a big step in self-care)

First, I bought a whole Chinese-style marinated chicken that came in a vacuum-sealed pack (no sugar or soy sauce, just some herbs and spices). I roasted it in the oven, then blasted it in the air-fryer to crisp up the skin. Had some of that over a salad for lunch.

For dinner, I shredded the chicken off the bones and kept aside the carcass for stock. I made a simple chicken soup with broth, salt, pepper, konnyaku noodles and some of the chicken. To add fat, I added a spoonful of HWC and pork lard. Tomorrow, I'll use the rest of the chicken shreds in carbonara sauce for lunch, and in a Mr. Tortilla wrap for dinner. :D
