Why I'm getting furious when dieticians announce 'carbs are fine' as someone with Hashimoto and insulin resistance

That’s not something I can tell you. Don’t have your medical charts, don’t have history, I have nada. Previous posts state you used to eat out instead of prepping at home. There’s have been studies shown that when you go to a restaurant, their calories and macronutrients claimed on their menus are higher than advertised. Fast food and chains are more accurate but mom and pop will not be. Maybe you became more active. Maybe you became less active when you have a flare ups. I really don’t know and there are a lot of variables. I’m sure if we really got down to it, we’d find where things were different than perceived. Not many medical professionals will take that into account as you can only bill so much time to insurance at once.

Hasimotos is a tricky one as everyone becomes inflamed from different things. It’s not a one size fits all approach or solution. Going to keto eliminated most if not all foods that would cause you inflammation. Typically it takes time to find out what causes it but many people don’t want to put in that work. Typically you’d do a FOD map diet to make your diet as bland as possible with little or no inflammation and slowly add foods to find out triggers.

However, I’m happy you found something that worked for you.
