Can't keep my weight up no matter what as part of Long Covid

Same. I had Covid in March 2020 and was overweight. (6ft 1in 275lbs) Started losing weight because I figured not eating out etc. Went to the doctor in Oct of 2020 after losing 60lbs. Had some blood work done on June 2021after losing 110lbs. Nothing came back except low iron. Not being able to work and insurance has stopped any other Doctor visits.

One thing I (and my wife) noticed is stress really makes me drop weight. My family moved this year and during that time I hit my lowest at 148lbs.

Now that I have been able to rest I am back to 160lbs . I do notice body symptoms come back when I start to gain weight again. ( Gut issues, numb legs, and overall feeling tired and sore) As for long term health I'm not sure. Just trying to live with it at this point.
