GPU

If you buy a GPU right now, you are overpaying by like $500+ for even the solutions that you are looking at.

In your shoes, if you are going Ryzen, I would substitute your 3600 for a 3200G or one of the other integrated graphic processors. Then I would sign up for the Newegg Shuffle, I would sign up in every discord, all of it, and wait to get a GPU at MSRP.

Buying two different CPUs (upgrading to a 3600 later) is "overpaying" but the amount you are overpaying by is less than the absolute insanity that is GPU prices right now.

Another option is to go the prebuilt route. Cards are available there with a smaller markup than what you're going to find trying to buy a card on its own.

The market is crazy right now, otherwise I wouldn't recommend either of the routes I've offered as advice. But it's the times we are computing in.
