How do some people just have tens of thousands of reward points on restaurants like Red Robin's, Chick-fil-A, etc?

They go there all the time.

My wife ensures that we use the same gas station in town, every single time we fill up our 3 cars, and she has a ton of points on there. She's always getting discounted gas, free drinks, free food, etc...

My son and I get in to every couple of movies that we see, free, as well as getting free drinks/popcorn, because we use the app for that theater company. Since we see most of the MCU movies in the theater, it saves us quite a bit.

If you use a place every week or every couple of weeks, you'll find those points rack up extremely fast. It's not really saving you much, as those places are expensive, but you at least feel a little better about it.
