how to make veggies taste good?

How did you roast them? I prefer mine to be pretty far on the well done side, and think they have much more flavor that way. Make sure you’re putting some olive oil on them too. And maybe try out some different seasonings? I go pretty heavy on garlic. You can also add some chopped garlic instead of just garlic powder. And in general just make sure you’re seasoning them enough, maybe they need a bit more than what you’ve done.

Also when you finish roasting you can add some kind of a sauce or dressing. Obviously that’s adding calories and other potential things you might not want, but if it gets you to be able to eat the veg it might be a good trade off. You could do something as simple as a few drizzles of balsamic vinegar which goes nicely on things like broccoli or brussels sprouts. I like to do some crumbled goat cheese and balsamic on mine. You can look up recipes for all kinds of sauces that will taste good on different veggies though.

Also don’t be afraid to go outside the box of traditional or basic seasonings and or sauces. You could do Asian or Indian inspired or Italian or Middle Eastern…etc.
