I'm about to risk my career for a chance at adventure. Need advice!

I'm actually doing this trip after a massive break up actually hahahaha, the plan was to get a home and settle down and all that stuff. I still plan on doing all that, but not until I've lived a bit more and seen the world and obviously met someone :)

And I have actually run similar numbers to what you have there, I sort of have pretty clear career path mapped out for my current job and know what my salary will look like over the coming few years too, so my assumptions are sound. But, I want to have a family, and bunch of kids (I hated being an only child growing up) so my retirement plan/second career plan is just do something I care about, less crazy hours and something I enjoy (probably start my own business in landscaping and a nursery for plants). I know I probably won't be extremely wealthy and travel like you, but I'd be happy for a nice life where I've provided as I could.
