On the Road Recipes?

Not familiar with what’s in a kitchenette. But I do agree with taking a small table top grill or air fryer if you have one.

For a dinner - not knowing what other appliances you’ll have, I recommended sticking to sandwiches, burgers, tacos, burritos, wraps, quesadillas etc…build your own type meals.

If there is a stove and microwave, build your own baked potato. Start the cooking in microwave & finish in oven.

If you’re thinking more like casserole type dinners like lasagna, pasta bakes, etc…you can make it ahead of time, freeze, & bring with you and warm up at your destination.

Canned bean soups and chili can feed a crowd.

One sheet dinner meals you can cook in the oven.
