Lukes planetary speeder was pretty luxurious and easy to fly compared to the engines-with-seat that Ren flew.I'm pretty sure in terms of difficulty to fly, the double-stacked engine block with cushion is a tougher jig than the speeder luke had.

The fix she did for the Falcon was removing something she installed. Remember the Falcon was owned by that fat guy on Jakku, who she scavenged for? She mentions its a upgrade that he put in, and given her mechanical knowledge it's really not a stretch to say he installed the upgrade for him.
