The point is Vlad's stakes are nowhere near the caliber individually to deflect a shot from GoB. Individual shots from GoB are already on the level where they present a lethal threat to most Servants. Remember Medea is one of the most powerful Casters in terms of the potency of her Mage craft and all her protective spells were torn through like wet tissue by attacks from GoB. If Vlad tries to use a single stake to deflect a GoB shot it's going to just get smashed through casually. He'd have to dedicate dozens of stakes at minimum for them to even have enough density to slow down/deflect a single shot from GoB.

Dracula Vlad was fighting six Servants who didn't even have to use their NPs, just mere physical attacks. In terms of conventional firepower Gilgamesh's raw output easily surpasses those 6 combined just based on how many portals from GoB he can open at once. Against Alcides Gilgamesh surrounded him from all sides in a dome formation and sustained fire shooting out thousands of NPs in a very short amount of time. That level of damage will wear out Dracula's regeneration very quickly not to mention Gilgamesh has NPs with anti-regeneration properties like Harpe up his sleeve. Dracula Vlad isn't even that impressive in melee fighting given he got fucked by Shirou in relatively close range with a set of Black Keys. He's certainly not Alcides. Again, Gil's auto defenses are capable of taking on anything Dracula can throw at him. Heck based off Prisma Illya Gil's Shield of the Gods can tank an Excalibur level beam attack.

Without Ea Gil still has plenty of divine NPs to hurt Achilles with (not to mention since Gil has Divinity all his attacks should pierce Achilles's defense). Achilles' shield can also only defend in one direction at a time whereas Gil can summon fire from any direction.

Gil just has a stupidly good winning matchup against most Servants. Only Enkidu, Karna and Alcides currently look to have a close to even matchup against him as they all have ways to consistently nullify his attacks. Only Solomon and King Hassan are able to wipe the floor with Gil.
