Excuse my language then. I should not have said reality. I should have said some semblance of thought in terms to attention to detail. This also applies to the amount of moments where the reader calls bullshit. Considering we do not know enough about ghoul physiology in this manga to comment on the structure of their DNA or their true origin, writing anything off as impossible does not really fly. Especially since it actually happened in the story.
As for only seeing Kaneki with full white hair during his torture, you are mistaken. In Chapter 61 it shows Kaneki with three stages of hair color. I will post the links to the pages below as well as a few pages where you can see the gradual change in Yamori's hair when he is describing his torture. This is of course assuming we are seeing Kaneki being tortured on separate days in this chapter, which is more than believable considering how condensed this arc was towards the end.

But there is still plenty of black. A gradual change.
...I just really like this panel's art.
The only argument I was trying to make is that it is more believable that his hair would gradually turn white instead of instantly stark white. That was my only issue.
