They both do different things so it is hard to compare them. Star Trek is set in a relatively unexplored Galaxy controlled by countless independent states who jockey for control, form alliances, sign treaties to ensure the balance of power, and seek out new life. Star Wars is set in a lived-in Galaxy with one dominant government at any given time with few if any minor powers.

Stories from Star Trek revolve around exploration, morality plays, and diplomatic maneuvering. Stories from Star Wars are more traditional fantasy and adventure stories. They can both hit some similar story beats but the way that the Dominion War plays out in Star Trek is a lot different than the way the Clone Wars or Galactic Civil War go in Star Wars. I personally prefer Star Trek but they are trying to do different things.
