What was the biggest total fuck up you ever done at your place of employment and got away with?

In college I worked in a commercial kitchen. once I we had tons of leftover rice that we had to throw out. like enough rice for 300+ people. being that it was a commercial kitchen, our garbage disposals could handle most anything you threw at them. Now normally our procedure was if you were disposing of large amounts of food to just throw it away and leave smaller amounts for the disposals. Being that it was late at night and i was tired as fuck and wanted to let my crew go home (I was assistant head cook, chef/boss had left for the night). I gave the ok to dump the rice down the garbage disposal. figured if it was done slowly enough, our industrial garbage disposal would be able to handle cooked rice just fine!

10 mins of dumping rice down the drain later, the sink was fully flooded and the disposer wasn't working. Maintenance was called in to clean the plugged drain. After working on it for 15 minutes or so, the head maintenance guy came up to me and said the clog was so large and deep in the pipe that they may have to jackhammer the floor and cut the drain pipe open to clear it. while I silently shat in my pants, they continued working on it and fortunately were able to get it unclogged. There were no consequences, but i almost ruined the whole kitchen.
