What is the crowd level like in Dec for Hunter Valley?

The tourists usually drop off around the October long weekend time up until the Easter holidays the following year. Chrismtas time is usually very quiet because of how unpleasant the weather is. It's either stinking hot, stinking hot and humid, or stinking hot and raining cats-and-dogs. But given the circumstances this year who knows.

My gut feeling is come next Monday every arsehole from Sydney will be up here. In fact many are already here ignoring the health orders. Not that anything is open yet.

Out of the two dates you pick I don't think it matters. Be aware though that some cellar doors don't open mid week so it might be a good thing to double-check. That said I can't imagine Audrey Wilkinson would be one of those. Or Hunter Valley Gardens.

As for bike riding, as a local, I think those that hire out bikes to unsuspecting tourists should be lined up against a wall and shot. The roads are in an appalling state, tourists driving around not paying attention, the heat, magpies, snakes, tractors and machinery, the heat, the distance between the wineries. You will have an appalling time. Drive your car and have a nice time instead.
