Two friends have had lollipop reductions & one was really happy, and the other got a second reduction with an anchor incision in order to go smaller and remove more sag. it’s really important to bring photos of breasts on people with a similar body type as well as possibly a goal bra in to your surgeon (instead of just discussing cup size or volume removed). I think this is always a good idea, but especially so with surgeons who only do lollipop incisions to make sure you’re on the same page about goal size. In general, these reductions tend to be removing less breast tissue, with the trade off of having fewer scars and often less down time. It sounds like your surgeon has a good portfolio which is encouraging. Some lollipop-incision only surgeons have after photos that look more like lifts without significant reductions. (My friend who had the second reduction was still able to wear her original bras after healing from surgery, but her breasts were perky without a bra on.)
