You are still within a timeframe where you can get everything back, if you will just do the obvious thing and call the cops. She admitted to stealing your property and oviously has the contact info for whoever she sold it to. The police can force her to tell them who it was, recover your stuff, and return the money to whoever bought it. If they chose to charge her with a crime for it (unlikely, under the circumstances, unless you ask them to), they will probably keep everything as evidence until the trial process is over, but you'd still get it back eventually.

Also, in case you haven't already decided this, your relationship needs to be over.
