Answering to your question 'is it doable'. Maybe but ..If you look up japanese people still buy lots of CDs. I remember seeing that more than 80% of their music industry is still based on CD sales. Anime music/singles are quite popular and by changing op/eds more singles will be sold and more artists will be promoted. If you also look it up Sony has control on lots of japanese music and anime music is no exception.
Depends on the op. I honestly never listen to western openings. they're just short theme songs. I rather have the short version of a song that I'll then look up the full version and add it to my playlists. I love Doctor Who's theme but it's not something I'd listen to my favourite song playlists while many anime songs are. I'll listen to them and sing them as many times as you said they're pop / rock songs.
Anime songs / OSTS are also deeply intertwined with the japanese karaoke culture. So once again if we talk about the commercial aspect changing them has better results
