I mean, I realize that the music is played on instruments that cost more than a Jupiter 8, but in the end, these pieces were just written by guys wearing wigs using nothing but ink and paper.

It takes years to learn to play those instruments, how to tune them, choose one, it takes a full music course just to learn to train, as in music reading, memorizing concertos and the discipline to practice.

That Jupiter 8 is a mass produced industrial product, if you had to take in your hands a proper violin (some one has to teach you how to grab it) or cello you'd be scared about how a fucking perfect instrument it is, like an alien technology hypersonic jet compared to a mass produced synth.
