I have a feeling that Moira will be again as one of the two/Multiple Co-Op Characters in REV3 , Capcom since RE5 tried to push a new female lead to replace their mature Females that are Jill , Ada and Claire due to age concerns ( I love all of them and I have no problems and I will love games starring them even if they are 70 years old but I think Capcom's logic is " In common sense how many women in their late 30's / early 40's can resist that kind of heavy missions " )

They tried First with Sheva and although her background and her "non-usual for gaming" look could make her a successul one but sadly Capcom made her character a generic one-dimensional one that didn't click with the fans , They Tried with Helena but also that didn't click with the fans and although Sherry's situation is much better than the past two examples especially combined with nostalgic feeling in her appearance in RE2 and due to her role in the overall plot but she didn't click enough to make her the future main female face of the series (but I wouldn't be surprised if she was playable in REV3 ) , Then in REV1 we had Jessica which of course due to the nature of her role can't be the main female face of the series but she was good and can be a great replacment of Ada in a different style , Then Came REV2 with Moira and from the look of it her character was more liked by the fans than the past examples especially that she is pretty young and is the daughter of a likable character so they might give her another push

So If in the next REV3 they are going with RE6 route then it will have a high chance it is a Jake/Sherry game , If it is a REV route game then IMO Moira has a chance she will be featured again
