Digitally, it has been done for almost every major Jump series, and I suspect a bunch of series in other magazines, too.

In print, it's far less common. It was apparently done for Dragon Ball, (which is longer than AoT), but it seems to be a niche product, since they're numbered by arc and a little hard to find on amazon, but the whole thing is definitely there.

So basically, if the color edition is printed, then this is a very rare thing for a manga to get. If it's only digital, then it's just the regular industry standard for shonen manga.
